As a dressing, it would be awesome on last weeks recipe- rainbow chopped salad or use it as a dip for fresh veggies. Raw, vegan, creamy and full of flavor.
Ingredients:
1 cup raw cashews (soaked for 1-3 hours and drained)
1 small ripe avocado
1 cup of water
the juice of 3 small limes
2 cloves of garlic
2 tbsp of cilantro
1/2 tsp sea salt
a few dashes of jalapeno Tobasco sauce (or a couple of pickled jalapeno rings)
Blend until smooth. You can adjust ingredients to your liking- more garlic if you like, more cilantro or lime if you like. Like spicy? Add more Tobasco sauce or jalapeno rings. Or try different seasonings- just keep the base of cashews, avocado, and water the same.
I used as a dip with fresh veggies. I topped the dip with Everything Bagel Seasoning from Trader Joe’s. It was amazing and filling.
