A Kaia Sister shared these cookies on Facebook. I tweeked it- because that is what I do! These are simple and delicious. No sugar and no oil. They taste like banana bread. They don’t spread on the cookie sheet so you can load it up.
Preheat the oven to 375, put parchment paper on your cookie sheet.
Ingredients:
4 ripe bananas
2 cups oats
1/4 cup chia seeds
1 cup of walnuts
1/2 cup pumpkin seeds
1/2 cup unsweetened coconut shreds
1/2 tsp cinnamon (taste the batter and see if you would like more cinnamon)
1/2 tsp vanilla
Put bananas into food processor and process until smooth. Add rest of the ingredients and process until the nuts have been broken up and it is well blended.
Scoop onto cookie sheet in mid sized scoops. Cook for 20 minutes. Enjoy!
