For this recipe you will need a high powered blender like a VitaMix or Blendtec. It is in 2 steps- first to make the cherry sauce and second to make the nice cream.
You will need:
Frozen bananas broken into pieces (4-6 bananas depending on size)
5 Medjool dates soaked for 30 minutes in a ½ cup of warm water
2 cups of frozen cherries (set out for about 30 minutes to thaw a bit)
water (or coconut water)
Cherry Sauce:
Put the cherries, dates (pit them first) and the soaking water into blender. Blend until completely smooth (you may need to add more water). Pour this into another container and wash out blender.
Banana Nice Cream
Put frozen bananas and about a ½ cup of water (you could also use coconut water or almond milk) into blender. Blend on high until smooth. If you have a VitaMix use the tamper tool to push down the bananas as the machine is running.
Put some cherry sauce on bottom of canning jar and then layer in some nice cream, repeat until you reach the top. You could also add some chia seeds if you like. Top with more cherry sauce.
