I am always looking for ways to get more veggies into my diet. This recipe is loaded with veggies, protein and it is delicious! My new favorite protein powder is from Complement. It has no flavor at all (which is a huge win for me because I am not a fan of the flavor of most protein powders) and has just 5 real ingredients! It is vegan and organic!

This smoothie makes 2.5 to 3 Qts depending on how much water you add. I drink it throughout the day so that I get all of those veggies in myself (rather than sharing). I usually consume 1.5- 2 Qts for my first meal (around 10:30) and the rest as a snack.
You will need to blend your greens down in batches to get all of them into your blender.
Ingredients:
1 pound spinach or Power Greens (from Costco
1/4 cup raw cashews
1 serving Complement protein
2 whole organic lemons
2 cups of frozen blueberries
1 cup of frozen cauliflower rice (I get the riced cauliflower from Costco- I use half of a baggie of cauliflower- it ends up being about 6 ounces)
water
Blend down your greens (start with half the greens, blend down and then add more greens until you have blended them all down)- with a little bit of water. Add in the cashews and blend until smooth before adding in the rest of the ingredients (I cut the lemons in half before adding to the blender). Add in the rest of the ingredients and enough water to blend until smooth.
If it needs a bit of sweetness you can add a few drops of liquid stevia or a tsp or so of Monk Fruit sweetener.
Optional: Maca powder (1 tbsp), Spirulina or Chlorella powder (1 tbsp).
