You will need raw cacao for this recipe. I order my favorite brand off of eBay with free shipping. It is by Healthworks. Invest in the 5 lb bag, it is cheaper and you can use it in a lot of different recipes. I also made fresh almond milk. You can use premade if you like. I will give you my recipe for almond milk first, then the chia seed pudding.
Almond Milk
1 lb raw almonds- roughly equivalent to 3 cups of almonds
2 pitted medjool dates
pinch of salt.
Soak the almonds in water over night. Drain and rinse the next day. Put the almonds in the blender with 8 cups of water, the salt and dates. Blend thoroughly. Strain through nutmilk bag (you can find these on eBay as well, or at Whole Foods). When completely strained add 4 more cups of water, stir to blend. Put into qt jars and store in the refrigerator. If you have a dehydrator you can dehydrate the pulp from the almond milk for almond flour.
Chocolate Chia Seed Pudding
3 cups fresh almond milk
2/3 cup of chia seeds
1/2 cup raw cacao powder
18 medjool dates (if they are hard- soak for 30 minutes in warm water)
1/4 tsp pink sea salt
1/2 tsp pure vanilla extract
Put the almond milk in blender with the cacao powder, dates, sea salt and vanilla. Blend until smooth, then add the chia seeds. Blend just until incorporated. Transfer to half pint jars and put in the fridge. Will be ready to eat in about 4 hours.
