Oil-Free Beet Hummus

Beets are low in calories and a great source of nutrients, including fiber, folate and vitamin C. Beets also contain nitrates and pigments that may help lower blood pressure and improve athletic performance. They should be a regular part of any healthy diet. I got the idea to add them to hummus and I am so glad I did. This hummus is so delicious and free of oil! It does contain tahini and more than most traditional hummus recipes- it lends creaminess and over all amazing flavor. 

 

 

 

 

 

 

 

 

I used my Vitamix blender to blend it to a completely smooth consistency. 

Ingredients:

1 15 ounce can of low sodium garbanzo beans or 1.5 cups of cooked garbanzo beans
1/4 cup of tahini
1 cup of frozen and defrosted beet chunks (I bought mine from Trader Joe's and just placed the bowl on the counter for a couple of hours to defrost)
2 large cloves or garlic (more or less depending on your taste)
Juice from 1.5 lemons
1/2 tsp of salt

Put everything in the blender and blend until smooth. Serve with veggies, flax crackers, whole wheat oil free pita bread, or baked french fries.
