This taco recipe uses Soy Curls. If you haven’t tried them before you are missing out. They are great in bbq dishes, Asian dishes and as taco “meat”. I cooked them in my air fryer so they are oil-free- just don’t overcook them. Since we are cooking them without oil or a sauce they can get dry if you cook them too long. When I reheat them I spritz with a little water.
Ingredients:
2 cups of soy curls (soaked for 15 minutes in enough warm water to cover them)
2 tbsp nutritional yeast
2 tbsp of taco seasoning
1/2 tsp of salt
liquid smoke (optional)
Drain the soy curls and squeeze out excess liquid but not all- save some moisture. Add seasonings and stir to coat. I keep my liquid smoke in an oil mister bottle, I gave the soy curls a light spray of the liquid smoke. Put in your air fryer at 370. I check it every 5 minutes and shake the pan. When finished they will be a little bit crispy but still moist.
Avocado Sauce Ingredients:
2 ripe large avocados
juice of 2 limes
about 10 pickled jalapeno rings and about 2 tbsp of the liquid from the jar
1/4 cup of chopped cilantro
Blend until smooth.
Other toppings:
Chopped white onion and cilantro
Shredded cabbage
And corn tortillas!
Assemble your tacos how you like and enjoy!
