What better way to celebrate Cinco de Mayo (and any Taco Tuesday) than with Tofu Tacos with Cilantro Lime Sauce?

Tofu Taco Meat
· Tofu: You’ll want to use firm or extra firm tofu in this recipe (we actually used a SUPER firm tofu from Trader Joe’s).
· Taco Seasoning: To make things easy, I used a store bought taco seasoning packet.
· Olive Oil: This helps keep the tofu from sticking to the pan.
Start out by crumbling the tofu into small chunks (you want them to be about the size of traditional ground meat). I use my hands to break it apart into a large bowl. Then sprinkle on the taco seasoning and drizzle with some olive oil. Toss that all together so that the tofu is fully coated in the seasoning.
Place the tofu into a large nonstick skillet over medium heat and cook for about 10 minutes so that the tofu gets browned and a little crispy around the edges.
Put taco meat into a corn tortilla that you crisped up on the stove or a flour tortilla. Top with cilantro and onions.
Cilantro Lime Sauce
What takes these tacos over the top is the Cilantro Lime Sauce. This sauce also makes a great salad dressing or veggie dip.
- 1 cup of raw cashews (soaked for 30-60 minutes in warm water)
- 1 bunch of cilantro (rinse and cut off the ends typically where the store tag bundles the bunch of cilantro)
- 1 small-medium jalapeno
- 2 large garlic cloves
- 2-3 limes (depending on size)
- 1/4-1/2 cup of water (you will start with ¼ cup of water but can add more until you have the desired consistency)
- A good pinch of sea salt
Drain cashews and add to your blender. Add in the cilantro, jalapeno, garlic, the juice of 1 lime (always start with one lime- you can add more but you cannot take away), salt, and ¼ cup of water. Blend until smooth. At this point taste to see if you need more lime juice or salt. After you have the right amount of lime juice you can add in more water to get your desired consistency. Taste again to see if you need to add more salt.
Top your Tofu Tacos with the Cilantro Lime Sauce and enjoy!
