Ingredients:
1/2 cup english cucumber peeled and diced finely
2 tbsp Vegenaise
1 tbsp fresh lemon juice
1 tsp dried dill
1 tsp dried parsley
1 tsp minced garlic
Salt and pepper to taste
Put all of the ingredients into a bowl and stir to combine. You can adjust seasonings to your liking. The dressing is chunky and light at the same time. Just pour over your salad and enjoy.
